My Mindful Morning Pancakes

I’ll be honest — I’m not really a breakfast person. I know a lot of people swear it’s the most important meal of the day, but if your body isn’t vibing with breakfast… stop forcing it to vibe with breakfast.

What frustrates me is when dietitians or doctors make it sound like there’s only one right way to eat. There isn’t. Not a single person’s body is the same — and as women, our own bodies aren’t even the same day to day.

Fun fact: the whole “breakfast is the most important meal of the day” thing? It didn’t come from science. It was a marketing slogan created by Kellogg to sell more cereal. And here we are, decades later, still repeating it (though at least we’ve moved past the sugary cereal part).

Anyway, rant over. Let’s talk pancakes. Because maybe big heavy breakfasts leave you feeling sluggish, but sometimes you do want a little something sweet in the morning. That’s where tuning into your inner + outer cues comes in (more on that in another post soon).

And if that sounds like you — these pancakes are for you.

Ingredients

  • ¾ cup Greek yogurt (full-fat or nonfat — your call, either packs a punch)
  • ½ cup flour (regular, oat, almond, gluten-free… whatever vibes with you)
  • 1 egg
  • 1 tsp baking powder (or baking soda)
  • 1–2 tbsp water (to loosen the batter slightly)
  • 1 tbsp pure maple syrup (a little kiss of sweetness)
  • A dash of cinnamon
  • Butter (for greasing the pan)

Instructions

  1. In a mixing bowl, combine the Greek yogurt, flour, egg, baking powder, maple syrup, and cinnamon.
  2. Add 1–2 tablespoons of water as needed — the batter should be thick but pourable.
  3. Heat a skillet over medium heat and coat with butter.
  4. Scoop about ¼ cup of batter per pancake onto the hot pan.
  5. Cook for ~3 minutes per side, until golden brown and fluffy.

Topping Ideas (What I Used)

  • Fresh blueberries & strawberries
  • A dollop of extra Greek yogurt
  • A sprinkle of cinnamon

Optional extras: a drizzle of maple syrup, crunchy granola, or chopped nuts for extra texture and protein.
